Hey guys here is a super easy recipe for the fall or any occasions
So lets begin with pie dough:
- 2 cups flour
- 1 tsp salt
- 3 tbsp sugar
- 3/4 cups chilled butter (1 stick and a 1/4 )
- 7 tbsp cold water + more if too dry
- In a medium size bowl add the flour, salt and sugar.
- Dip the butter in to the flour then using a grater, grate the butter in
to the bowl. By dipping the butter into the flour it help the butter from melting on your hands.
- Slowly add the water and gently with the tip of you fingers mix the until
everything is incorporated and looks crumbly but holds together.
- Wrap the bowl and refrigerate for 1.5 hours roll out when needed.
- Roll the pastry very thin and place in tart shell or muffin tins and place sure to butter and flour your molds so you dough won’t stick bake @ 350F for 20 until golden brown allow to cool in the tin for 10 mins then gently remove them and allow to cool on a cookie rack until cool to the touch.
- One more note on that before baking the shells is to use some short of weight so the shells don’t create air pockets and won’t shrink too much.
- Use the custard recipe as the pie shells are cooling to make allow the custard to cool then, put the custard in the pie shells and enjoy.

Next is Pound Cake:
- Stand mixer with the paddle attachment beat soften butter and sugar until the mixture looks creamy.
- Then slowly add your eggs and vanilla and set you oven at 350º F or 175º C or gas level 4
- Once the eggs are incorporate and reduce speed and slowly add the flour until all the flour is combined. If you find you cake mixture a little too dry add a bit of water a non clump state.
- Butter and flour you loaf pan and pour in the pound cake batter and place into the oven for a 30 minutes check with a tooth pick if come clean it done.
Cookies; Shortbread:
- 2 sticks butter soften
- 1 cup icing sugar
- 1 tsp vanilla extract
- 1/2 tsp salt
- 2 cups flour
- In the mixing bowl place soften butter add the sugar and with the paddle attachment on the mixer cream the sugar and butter together until you a get a smooth pale yellow mixture.
- Slowly add in the salt and vanilla extract and flour until the dough is almost combined.
- Knead the cookie dough by hand 3 mins dough will be a bit sticky lightly flour and roll into logs then wrap with clear wrap and parchment then place in the freezer for one hour or more.
- Once the dough is frozen it is easier to cut in to coins and place on to a baking sheet bake @ 350º F for 15 min or until slightly golden brown.
- Allow to cool for 5 min then place on a cooling tray.
Custard:
- In metal bowl separate three egg only keeping the egg yolks you can freeze the egg white and use them for another project or make a health omelet.
- With a whisk beat eggs, corn starch and sugar until you get thick pale yellow paste and heat the vanilla and cream on a pot ( DO NOT BOIL ).
- Once the cream is hot enough slowly whisk a bit of the hot cream in o the egg mixture until the egg are warmed then pour all the mixture into the pot and mix on med-low heat until the custard is thick. Remove from heat and place into a clean bowl wrap with plastic wrap and refrigerate last two weeks.
Cobbler
- 1/2 cup 1 stick butter melted
- 1/3 cup veg oil
- 1 1/2 cups sugar
- 1 tsp baking powder
- 2 1/2 cups flour
- 1 tbsp vanilla extract
- 2 cups milk and / or butter milk
- In a mixer bowl add the sugar and with the paddle attachment beat the butter and oil together.
- Get two more bowls. In one bowl add the flour and baking powder together and in the second bowl mix together 1 cup milk and 1 cup butter milk ( if you don’t have butter milk just add a tbsp of vinegar to the other cup of milk and the a quick substitute for it.)
- Add everything in to the mixer and pour in to buttered and floured cake pans
For the fruit topping:
- 2 cups of any fruit
- 2 tbsp brown sugar
- 1/4 cup lemon juice
- In a large fry pan heat the pan with the lemon juice and brown sugar and add the fruit sauté until fruit is release some of it juices remove from heat add to the cake and bake.
- Bake for 350º F for 30 mins or until the center is clean when you insert a toothpick

Slowly add the water and gently by fingertips mix the batter sorry guys but both hands wer kind of full and dirty so I could show that step too worried about my camara.

- This is what it should look like once the water is joined a little dry-looking but one mass and there are still butter pieces in the dough.
